As the Back of House F&B Manager, you will lead all aspects of the kitchen of the Food and Beverage department. Working with all resort departments to meet guest expectations. Trains, supervises, schedules, holds accountable and assists in evaluating Team Members. Any other duties that may be necessary to the daily functioning of the resort.
 

  • Works alongside the Front of House Restaurant Manager by routinely supervising the front-of-house operations and being present on the floor when needed.
  • Forecast the F&B Department regarding staffing and financial metrics to achieve the goals of the company, team members, and guests.
  • Establishes recipes, quality standards, production schedules, and timelines.
  • Actively leads all aspects of and ensures that daily food preparation and presentation standards are met.
  • Schedules team members and processes payroll timely and accurately.
  • Demonstrates and provides training to team members on cookery, knife skills, proper cooking techniques and plating presentation.
  • Delegates job functions, for assigned workstations with attention to detail, speed, and accuracy.
  • Collaborate with Front of House F&B Manager hearing what guests are asking for or enjoy; to create menu items, daily specials beverage menus/pairings, to enhance guest offerings.
  • Implement effective controls for food, beverage, retail, and labor costs within the department to ensure efficient operation and expenses stay within budget limitations in efforts to achieve budgeted revenue and labor expenses.
  • Investigate and resolve food quality complaints. Review, evaluate, and change operational procedures as needed.
  • Attend and administer staff meetings, food/alcohol vendor training, strategy meetings, and executive training classes.
  • Prepares food & beverage department budgets and monitor expenditures to ensure costs of goods sold and operating expenses are handled according to budget.
  • Plans and develop procedures to improve operations, establish work priorities and departmental goals, and coordinates department training and development.
  • Consistently reports to management on priorities and activities of the department.
  • Directs communication with departments and outside entities and acts as a business contact with colleagues, purveyors, and Health Department officials.
  • Ensures daily checklists are completed for Quality Assurance (QA) standards and maintains complete and current Safety Data Sheets (SDS) logbook and safety binder.
  • Maintains cleanliness and proper sanitation of food and beverage areas and ensures compliance with state food, liquor (where applicable), and sanitation laws and regulations.
  • Works closely with management to ensure that all areas of food and beverage outlets are improving revenues and guest satisfaction.
  • Routinely touches tables on the service floor to ensure guest satisfaction and handles and resolves guest complaints during shift.
  • Ensures all guest interactions are handled in a positive, accurate and efficient manner.
  • Responds to client’s menu inquiries for events and custom curates as needed.
  • Completes monthly inventory counts of all items & maintains daily logs of waste, & into circulation items. 
  • Completes bi-weekly food vendor orders to ensure that enough product is on site for service.
  • Keeps accurate temperature logs of delivering truck orders, service stations, all refrigerators & freezers and equipment.
  • Maintains a Green rating with the Health Department and stays in compliance with EcoSure audits.
  • Assist in all other related duties as assigned.

  • High School diploma or equivalent
  • 5+ years experience in the culinary field
  • 3+ years of supervisory experience in the culinary field
  • Valid Sanitation and Safety Certificate
  • Must have excellent coaching and mentoring skills
  • Ability to lead and motivate a team 

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions: 

  • Completion of a formal culinary training or apprenticeship program
  • Minimum 2 years of management experience
