Additional Responsibilities Include:

  • Prepare back up foods according to specs, stock and keep kitchen and all areas clean. Assure that the food area is kept clean and it is stored properly at the end of each shift according to health specifications. Ensure that food items are ticketed and dated with an employee name to ensure freshness and that stocked items are received and accounted for. Record temperatures of all applicable refrigeration units and pot sink sanitizer levels. Record and report all loss of food due to spoiling and over production. 
  • Prepares work area at beginning of shift, restocking items for sale. Assures all beverage items and other beverage supplies are rotated, ordered and received in a timely manner so that adequate inventory levels are maintained to support volume. 
  • Maintains all health and sanitation standards. Cleans and sanitizes bar area, bar equipment, and utensils. Prepare bar area in supplies needed such as ice, slice and pit fruit garnishing drinks etc. Cleans reach-in, sinks, drains and empties trash when necessary.
  • Knowledge of mixed liquors and ales, soda, water, sugars and other prepared beverages. Serve other cold beverages such as wine, beer and sodas and collect payment for beverages served, as well as food.
  • Food preparation of hot and cold menu items utilizing flat top grill, oven and fryer, preparing quality food items for customers to specifications. 
  • Stewarding duties: washing pots, pans, kitchen utensils, serving bowls, serving dishes and kitchen equipment. Maintaining a clean, organized and safe kitchen working area and environment. Wash, clean or sanitize all work areas including refrigerator and utensils used. Keep trash and boxes broken down and move them to the proper area. 
  • Full knowledge of POS System and end of shift reports. Performs cashier functions ringing up purchased items. Ensures accuracy in handling credit card and room charge transactions. Maintains balancing at end of shift according to established departmental procedures. 
  • Carry out a reasonable request or special project by management

  • Adheres to Company standards and maintains compliance with all policies and procedures.

  • High School Diploma/GED
  • Up to 1 year of related experience
  • Able to work flexible schedules including mornings, evenings, weekends and holidays
  • Valid State of Hawaii Liquor Card-Blue
  • Valid State of Hawaii Food Handler Certificate
  • Must provide TB clearance within 30 days of hire
